- Mung bean – 100g
- Rice – 2 teaspoons

- Water – 3,000 ml
- Common rue – 3-4 roots
Direction
- Rinse the dried mung beans under cold water and remove any impurities or debris.
- Add 3,000 ml of water in a large pot. Put green bean, common rue and rice into the water.
- Once boiling, reduce the heat to low and simmer for about 1 hours until the peels of beans are floated in the soup. Remove the peels out of the pot.
- Then, continue to simmer for about 30 minutes further until it becomes “sand-like”. Stir occasionally and add more water if needed. If the soup becomes too thick, you can add more water to achieve your desired consistency. Conversely, if it’s too thin, you can continue simmering until it thickens slightly.
- Add the sugar to the pot.
- Stir well until the sugar dissolves completely. Then, it is ready to serve.
