Mooli with tofu puffs and glass noodle is a light and sweet plant-based dish. The natural sweetness of the mooli is absorbed by the tofu puffs and glass noodle, giving each bite a fresh and fragrant taste.
Ingredients (serving 1-2 people)
- Mooli – about 500g
- Deep-fried tofu puffs – about 10 pieces
- Glass noodle – about 50g
- Garlic – 2 cloves, sliced
- Ginger – 2 slices
- Salt – about ½ tsp
- Vegetable oil – about 2 tbsp
- White pepper – about ¼ tsp
- Black pepper – about ¼ tsp
- Mushroom powder – about ½ tsp
- Sesame oil – about 1 tsp
- Coriander – several leaves (for garnish)
Direction
- Peel the mooli. It is recommended to peel the same spot twice since there is a tough layer of fibre under the skin. This will make the mooli softer and sweeter after cooking. Then, slice the mooli into medium-thick pieces and set aside.
- Slice the garlic and have the ginger slices ready.
- Soak the glass noodle in water.
- Heat a pan over high heat and add vegetable oil. Once the oil is hot, add the ginger slices and stir-fry until fragrant. Then add the mooli slices and stir-fry. When the mooli starts to release some water, add the garlic slices and keep stirring to make sure the mooli is evenly heated.
- Sprinkle in the white pepper, black pepper, and mushroom powder. Stir-fry until everything smells fragrant.
- Add enough water to just cover the mooli slices. Bring to a boil over medium-high heat, then add the tofu puffs. Continue cooking for about 12-15 minutes, or until the mooli becomes soft and flavourful. Add salt to taste.
- Add the glass noodle into the pan. Let it absorb the sweet mooli broth. When most of the liquid is absorbed, drizzle with sesame oil for extra fragrance.
- Your sweet and comforting mooli with tofu puffs and glass noodle is ready. Put the coriander on the top. Serve hot and enjoy this heartwarming dish.
