Lettuce With Daikon Shred

This lettuce with daikon is a great balance of texture and umami. Ingredients (for 1 serving)

  • Lettuce – 200g
  • Daikon (white radish), shredded – 5g
  • Kombu soy sauce – 4 tbsp
  • Vegetable oil – 2 tbsp
  • Salt – ½ tsp
  • Water – 500ml

Direction

  • Rinse the shredded daikon with water, then soak it in a large bowl of water for 5 minutes.
  • Pour the soaking water into a pot, bring it to a boil over high heat, add vegetable oil, and cook the daikon shred for 5 minutes until they become tender and release their sweetness.
  • Add the lettuce and boil for about 2 minutes until slightly softened but still crisp.
  • Drain the lettuce and daikon. Place them on a plate. Drizzle with kombu soy sauce.
