Seitan is a popular meat substitute made from gluten, the protein in wheat. It is one of plant-based meat. Seitan is a very common food ingredient in vegetarian or vegan cuisine in Asia. With different kind of sauces and cooking methods, seitan can be cooked as different types of cuisines.
Ingredients (serves 2 people)
- Strong bread flour – 300g
- Salt – 1/2 tsp
- Vegetable oil – a little bit
- Baking powder – 1/2 tsp
- Water – Around 3 tablespoon but it really depends on the texture of dough kneaded
- Vegetable oil – for deep frying
Direction
- Put the strong bread flour, baking powder, oil and salt into a big bowl
- Mix them together
- Pour a little bit water and knead them until a dough is formed
- Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes. This helps develop the gluten and gives the seitan its chewy texture.
- Leave it aside for 2 hours
- Wash and knead the dough in water to clear the milky powder again and again, until the washing water of dough is clear
- Cut the dough into a number of small pieces
- Deep fried them one by one. Then, homemade seitan are ready to cook for different types of cuisines.
