Garlic and black bean stir-fried oyster mushrooms is a quick and simple dish that’s perfect for a busy work night dinner. The combination of black beans and garlic enhances the oyster mushrooms with a rich flavour, making it an unforgettable experience.
Ingredients (serves 1-2 people)
- Oyster mushrooms – 125g
- Garlic – 20g
- Ginger – 2 slices
- Spring onion – 2 sticks
- Chilli – little
- Black fermented beans – 1 tablespoon
- Vegetable oil – 1 tablespoon
- Salt – ½ teaspoon
Direction
- Mince the garlic, slice the ginger, and cut the spring onions into segments. Set aside.
- Clean the oyster mushrooms and set them aside.
- Heat 1 tablespoon of vegetable oil in a frying pan over high heat.
- Add the ginger slices, minced garlic, spring onions, black fermented beans, and chilli to the pan. Stir-fry until fragrant.
- Add the oyster mushrooms to the pan and stir-fry over high heat until the mushrooms soften and shrink. Add salt and continue to stir-fry until most of the liquid evaporates.
- Once the oyster mushrooms are fully softened, transfer them to a plate and serve.
