Fried King Oyster Mushrooms With Ginger, Chive And Green Onions

The king oyster mushrooms with ginger, chive and green onion is a vibrant and flavourful delight, showcasing the versatility of king oyster mushrooms when paired with the variety of spice and herbs. This recipe involves tearing the mushrooms into hearty strips that maintain a satisfying texture, stir-fried with slices of ginger, garlic, and a hint of red chilli for a gentle warmth. The addition of basil leaves and chive introduces a fresh, herbal layer, while a splash of soy sauce, a dash of sesame oil, and a sprinkle of black pepper round out the flavours, creating a beautifully balanced dish.

Ingredients (Serves 1-2 people)

  • King oyster Mushrooms – 3 pieces
  • Garlic – 4 cloves (sliced)
  • Green onions – 2 (cut into pieces)
  • Red chilli – 1 (sliced, adjust to taste)
  • Basil leaves – 30 g
  • Chive – 10 g
  • Ginger – About 4 thin slices
  • Soy sauce – 2 tablespoons
  • Sesame oil – 1 teaspoon
  • Sugar – 1/2 teaspoon
  • Salt – 1/4 teaspoon
  • Rice wine – 2 tablespoons
  • Black pepper – A pinch
  • Water – 3 tablespoons
  • Oil – 1 tablespoon (for cooking)

Direction 

  • Clean the king oyster mushrooms and pat them dry with kitchen paper. Then, tear them into strips by hand. Don’t tear them too small to keep a good texture.
  • Slice the garlic and red chilli. Cut the chive into small pieces.
  • Heat one tablespoon of oil in a frying pan. 
  • Add the ginger slices, garlic slices, red chilli slices, and green onion pieces. Stir until fragrant. 
  • Add the mushroom strips and stir-fry on high heat. Then, add rice wine, salt, sugar, soy sauce, and water. Fry until the mushrooms are soft and the sauce is nearly absorbed.
  • In the last two minutes, add the basil leaves and chive. Stir quickly. Add the sesame oil and turn off the heat. Transfer to a dish.
  • Sprinkle with black pepper to finish. The king oyster mushrooms with ginger, chive and green onion is ready to serve.
