Fried chicken fillet with black peppers is very delicious. The texture of king oyster mushrooms is very similar to that of meat. Because of this, they are often used in vegetarian dishes. In this recipe, the rolling knife technique is a basic skill for making the “chicken steak” and is key to achieving the desired result.
Ingredients (serves 1-2 people)
- Oyster king mushrooms (big) – 2 pieces
- Olive oil – 2 teaspoons (for marinating)
- Olive oil – 10 teaspoons (for frying)
- Black pepper – 1 teaspoon (for marinating)
- Black pepper – little (for garnishing)
- 5 spicy powder – 1/2 teaspoon (for marinating)
- Sesame oil – 2 teaspoons (for marinating)
- Soya sauce – 2 teaspoons (for marinating)
- Corn powder – 1 teaspoon (for marinating)
- Rice wine – 2 teaspoon (for marinating)
- Mirin – 1 teaspoon (for marinating)
- Sugar – 1/4 teaspoon (for marinating)
- Pepper – 1/2 teaspoon (for marinating)
- Mushroom powder – 1/2 teaspoon (for marinating)
- Salt – 1/4 teaspoon (for marinating)
- Cake flour – around 80 g
- Basil leaves – little (for garnishing)
Direction
- Pour hot water into oyster king mushrooms for around 2 minutes. And wash it with some cold running water and then squeeze the water from it. Slice it into fillet-shape with rotational cutting
- Prepare the sauce for marinating by mixing olive oil, black pepper, 5 spicy powder, sesame oil, soya sauce, corn powder, rice wine, sugar, mirin, pepper and mushroom powder. Marinate the fillets for 30 minutes.
- Put the fillets on the cake flour in a plate so that the surface of fillets are put with all cake flour. Then, put the fillet back into marinating sauce and put the fillets on the cake flour again.
- Heat some olive oil in the deep fry pan.
- Fry the fillet into golden yellow with medium fire. Then, sprinkle some black pepper on the chicken fillet on the plate.
