Braised egg noodle with straw mushrooms is a very yummy main dish in the plant-based cuisine. There are a number of egg noodles in the world. Different places have their particular egg noodles with different textures. Today, what egg noodle is used in this recipe is very special, namely e-noodle. It is originally come from Hong Kong. The texture is very chewy and aromatic.
This is a vegetarian dish. If you are vegan eater, you can replace it with other vegan noodles.
Ingredients (Serving 1-2 people)
- E-noodle – 1 piece
- Straw mushrooms – 200g
- Shiitake mushrooms – 4 pieces
- Plant-based oyster sauce – 1 tablespoon
- Thick soya sauce – 1 teaspoon
- Sesame oil – 1 teaspoon
- Vegetable oil – 2 tablespoons
- Water – 3 tablespoons
- Ginger – 2 slices
- Sugar – 1/3 teaspoon
Direction
- Cut shiitake mushrooms and straw mushrooms into slices.
- Mix water, thick soya sauce, sugar and plant-based oyster sauce.
- Boil water. Blanch the dry e-noodle for 1 minute. Then, leave them aside.
- Heat the saucepan. Add 2 tablespoons of vegetable oil. Put ginger into it first.
- Then, stir-fry shiitake mushrooms and straw mushrooms for around 3 minutes. Add the bowl of sauce and adjust the fire into medium fire. Braised the mushrooms for around 6 minutes.
- Add the e-noodle and quickly fry them together in the saucepan for around 2 minutes
- Finally add the sesame oil into it. The braised egg noodle with straw mushrooms is ready to serve.
